- 1/2 lb chicken breast or beef strips, sliced
- 1/2 onion, sliced
- 1 bell pepper, sliced
- 3 cloves garlic, diced or mashed
- 2 tbsp oil
- 2 limes (or lemons, but I prefer limes), squeezed for juice
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/2 tsp pepper
- 6 large flour tortillas
The Directions:Toss meat & all other ingredients (except tortillas) together & marinate for at least 30 minutes (the longer the better).
To cook, layer the meat & vegetable mixture on a broiler pan & place in broiler for a few minutes, or until meat is cooked through, then discard juices. Meat can also be grilled or pan-fried. If pan-frying, add all vegetables & juices to the pan with the meat.
Serve on tortillas & roll like a burrito. Can be served with garnishes such as sour cream, salsa, guacamole, chopped cilantro, lettuce &/or shredded cheese.
